The vegetarian oyster

Waitrose has just launched an alternative offer for vegetarians – an oyster leaf. It’s a vegetable used by chefs like Ferran Adria (of El Bulli) that tastes remarkably like the crustacean. It’s also less likely to give you bellyache.
It’s a great example of publicising an unusual or quirky product to gain lots of publicity. It has so far featured in the Guardian and various food publications.
Rhonwen Cunningham, the salad buyer at Waitrose said, ‘With a distinctive, salty taste, this green leaf might not look like much but it certainly packs a punch. We’ve launched a variety of sea vegetables, with a similar saltiness in Waitrose over the last year and they’ve been incredibly popular.”
